I am always looking for new food combinations to try. I had heard of the almond + green bean one before, but had never tried the two together. I love almonds, and I love green beans, so I made this dish last week along with kale and spinach pocket pies.
To start, prep by toasting your slivered almonds.
Then, cook your green beans a bit
and cool them off with ice cold water.
Saute...
and toss with your toasted almonds from earlier!
This side is great with pretty much anything, or just by itself because it's that delicious.
Green Beans with Almonds
from American Grown
Ingredients:
1 cup slivered almonds
1 teaspoon melted unsalted butter
1 teaspoon paprika
1.5 lbs. green beans, washed and trimmed
1 teaspoon olive oil
1 tablespoon unsalted butter
1 shallot, minced
salt and pepper, to taste
Directions:
Preheat oven to 350F. Toss together the almonds, melted butter, and paprika on a medium rimmed baking sheet lined with foil. Spread the almonds in a single layer and bake about 7 minutes. Set aside.
Bring to a boil a large pot of salted water. Cook the green beans for 5 minutes, drain, and place in a large bowl of ice cold water. Drain once more and set aside.
In a medium skillet over medium heat, warm the olive oil and butter until butter is melted. Then, add the shallots and saute 2-3 minutes. Add green beans and saute until thoroughly warmed. Season with salt and pepper.
Place beans in a medium bowl and stir in the toasted slivered almonds. Serve immediately.
