Brown Butter Strawberry Banana Bread

Basic banana with no other special frills or additions tastes great, but banana bread with brown butter and strawberries is terrific! 

After traveling away from the great banana bread by making peanut butter banana bread as well as chocolate chocolate chip banana bread and having them turn out dry with a strange texture I was not expecting this loaf to turn out tasting delicious just because the previous variations of banana bread had not turned out quite the way I expected. However, this quick bread was so flavorful and tasty. I loved the addition of the strawberries and the brown butter made it excellent.

Start out by browning your butter, and then setting aside to cool.

Then, combine your dry ingredients,

followed by the wet ingredients, brown butter, and mashed bananas.

Wet ingredients meet dry ingredients.


Slice a strawberry to place on top of the batter.

And you're done!

Brown Butter Strawberry Banana Bread
makes 1 9 x 5-inch loaf

3/4 cup unsalted butter
2 cups all-purpose flour
3/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
2 large eggs
1 teaspoon vanilla extract
1/4 cup buttermilk or plain yogurt
1 1/4 cup mashed ripe bananas (2-3 bananas, depending on size) 
1/2 cup diced strawberries + 1 strawberry sliced very thin, for topping

Preheat oven to 350F. Grease and flour a 9 x 5-inch loaf pan. Set aside. 
Brown the butter in a saucepan over medium heat. Once browned, set aside and allow to cool to room temperature. 
Combine the flour, sugar, baking soda, salt, and cinnamon in a large bowl. Set aside. 
Whisk together the eggs, vanilla extract, and buttermilk or yogurt in a medium bowl. Whisk in the mashed ripe bananas, followed by the cooled browned butter. 
Add the wet ingredients all at once to the dry ingredients and fold to incorporate. Fold in the diced strawberries until just combined. 
Place batter in the prepared pan and top with the thinly sliced strawberries. Bake 50-60 minutes, or until a toothpick comes out clean. Allow to cool 15 minutes before taking out of the pan.
