Honey Lime Strawberries with Vanilla Ice Cream

Fall will be here before long, and with fall comes the end of fresh berry season. Because of this, I am a little sad.

Since strawberries are one of my favorite fruits, the 2 lb. cartons were on sale last weekend, and I kept going back to this recipe because it looked so appealing, I was so happy to taste the lime, cardamom and honey with the these pretty berries.

What better way to serve strawberries?

Strawberries, honey, limes and cardamom. The ice cream comes later!

2 lbs, sliced!

This calls for lime zest and lime juice. I recommend zesting first before cutting the lime and squeezing out the juice. It's just a little easier.

And by the way, I only used 1 lime, even though 5 are pictured above.

Honey and lime juice come to a boil,

and lime zest and cardamom are added.

Mixture meets the berries.

After it stands for about 30 minutes, the juices come out and the strawberries are beautiful!

Serving these over vanilla ice cream is a must, before pumpkin bread and candy corn come into the picture.


Honey Lime Strawberries with Ice Cream
serves 6

Ingredients:
2 lbs. strawberries, hulled and sliced
1/4 cup + 2 tablespoons honey
2 tablespoons freshly squeezed lime juice
1/2 teaspoon finely grated lime zest
1/4 teaspoon ground cardamom
vanilla ice cream

Directions
Place the strawberries in a large bowl and set aside.
Combine the honey and lime zest in a small saucepan over medium heat and bring to a boil. Remove from heat and stir in the lime zest and cardamom. Pour this mixture over the berries and stir to coat. Allow to stand, stirring a couple of times, until slightly softened and juicy, about 30 minutes. 
Serve the strawberries with vanilla ice cream and enjoy right away.

  3. Honey, lime, cardamon, and strawberries sounds like such an interesting combination. I can't imagine how good it tastes with ice cream. Coincidentally, I have strawberries in the fridge right now and my mom recently bought me an ice cream machine...
