Honey Lime Strawberries with Ice Cream
2 lbs. strawberries, hulled and sliced
1/4 cup + 2 tablespoons honey
2 tablespoons freshly squeezed lime juice
1/2 teaspoon finely grated lime zest
1/4 teaspoon ground cardamom
vanilla ice cream
Place the strawberries in a large bowl and set aside.
Combine the honey and lime zest in a small saucepan over medium heat and bring to a boil. Remove from heat and stir in the lime zest and cardamom. Pour this mixture over the berries and stir to coat. Allow to stand, stirring a couple of times, until slightly softened and juicy, about 30 minutes.
Serve the strawberries with vanilla ice cream and enjoy right away.
