Spinach Pie

I feel like I'm always making something that involves crust and spinach, but here is yet another great recipe that combines these two elements. 

I thought that this would be exactly like a quiche, but it really did fit under the pie category because of it's heavier filling. It was delicious! 


You'll need a lot of spinach for this recipe, but it cooks down a lot. 

Chop up the garlic and 1/2 of the onion, followed by 1 teaspoon of lemon zest. 

Saute the onion and garlic, 

and then gradually add the spinach and cook until wilted.


Lots of spinach!


Then, whisk together the eggs and milk, followed by the salt and pepper and lemon zest.

Add the wilted spinach and half of the cheese to the mixture and place in the prepared pie crust.


Cook 45-60 minutes, until golden brown.


Make sure to allow it to sit about 10 minutes before serving so it has a chance to settle a bit.

Spinach Pie
makes 1 9-inch pie

Ingredients:
1 9-inch unbaked pie dough round
2 tablespoons olive oil
6 cloves garlic, minced
1/2 white onion, chopped
1 lb. fresh baby spinach
1/2 teaspoon salt
1/4 teaspoon pepper
2 large eggs
1 cup milk or half and half
1 teaspoon grated lemon zest
12 oz. swiss and gruyere mix

Directions:
Preheat oven to 375˚F. Place the pie crust in a pie plate and crimp the edges.
Heat the olive oil over medium heat in a large skillet. Add the minced garlic and chopped onion and saute for 5-7 minutes. Add the spinach, little by little, and cook until wilted. Drain any liquid that may have come about and set aside.
Whisk together the eggs and the milk or half and half in a medium bowl. Add the lemon zest, salt and pepper. Then, add the spinach and half of the cheese and stir until combined. Pour this mixture into the pie dough and evenly sprinkle the top with the remaining cheese.
Bake for 45-60 minutes, until golden brown and the center is set. Allow to sit 10 minutes before slicing and serving.
