Spinach Feta Mozzarella Mini Pies

Always making sure we have the ingredients for a recipe before I make it is something I always try to do. However, I forgot to pick up more feta for this recipe.

I just ended up using some mozzarella we had to make up for the it! 

Start with the spinach.

After a few other ingredients, place the filling into each pie dough round in an electric pie maker and sprinkle with more cheese.

All finished, even without the ingredients initially intended.

Spinach, Feta, and Mozzarella Mini Pies
makes 9 mini pies

2 pie dough rounds
18 oz. spinach
5 tablespoons heavy cream
2 tablespoons finely chopped green onions
6 drops of hot-pepper sauce
salt and pepper, to taste
2/3 cup feta
1/2 cup mozzarella

Roll out the pie dough and cut out 9 large rounds using the large end of the accompanying pastry cutter. 
To make the filling, process the spinach in a food processor. Add the processed spinach to a large bowl. Then, stir in the cream, green onions, hot-pepper sauce, and salt and pepper to taste. Stir in the feta. 
Quickly place four of the pie dough rounds into the preheated pie maker and mold the dough with the accompanying pastry press. Then, add 1/4 cup of the filling into each molded pie dough. Scatter part of the mozzarella cheese on top of the filling and then bake until the crusts are well browned, 9-10 minutes. Using 2 forks, carefully lift each pie out of each pie mold and allow to cool slightly. 
Repeat, cooking the remaining 5 pies.
