Cauliflower Mac and Cheese

When a recipe calls for an entire bunch of parsley, an entire ear of corn, or an entire pineapple I am so happy because I don't like to have half a can of beans or half a zucchini left over from a recipe. Maybe they'll be used, but it annoys me when these halves go to waste. If you use an entire bunch of kale, you don't have any leftover and therefore you don't have any worry about the leftover not being used.

This recipe only calls for part of a cauliflower, and I almost wasn't going to make this because I didn't have a plan for the rest of the cauliflower. That sounds a little ridiculous but I didn't want to have less than one cauliflower sitting around. However, I am so glad I did end up making this because it turned out great. It was easy, no oven required, and quick.

Raspberry Mint Sorbet

Whether it be chocolate peanut butter, apple cinnamon, salted caramel, or strawberry rhubarb, I love flavor combinations. Now, it's time to add raspberry mint to the list of flavors that taste amazing together. 


The raspberries add color, taste, and a little texture to this sorbet while the mint adds a whole new dimension that is new and refreshing. This sorbet is the perfect treat for an unreasonably hot summer day or just because since it is so delicious.

Spicy Zucchini and Corn Frittata


So, let's be real.

The main reason I made this frittata was so I could use this new egg holder I just got. It doesn't feel right to use it with a recipe that calls for just a few eggs, but it seemed alright to use it for the 8 eggs that are called for in this frittata.

Molly Moon's Salted Caramel Ice Cream


Ice cream has never been one of my favorite desserts. Don't get me wrong; I've always liked it, but it's never been my first choice in sweets. 

However, Molly Moons makes the BEST ice cream and their ice cream is most definitely at the top of the desserts I love. There is a definite difference between their ice cream and regular ice cream (at least I think so).

Caprese Bagel Paninis

One of the things that frustrates me the most is when a recipe doesn't turn out the way you want it to.  

These paninis were fantastic, but I'm talking these bagels. I made bagels last week so I could make these paninis, but they just did not turn out the way I wanted them to. They didn't have the texture I was expecting and they didn't look like the puffy bagels I wanted them to be. I liked the way they tasted, but they didn't taste how a good, homemade bagel tastes. They just tasted like bread to me.

Chicken Pesto Mini Pies

Whether sweet or savory, pies are probably my favorite thing to make. I love how versatile, simple, and easy they are to make and how many different combinations and flavors of pie that can be made. 

One downfall of pie is the amount of time that it takes for pies to cook and cool, but with these mini pies, it doesn't take too long for the pies to be ready to eat. 

If you make the pesto, pie crust, and puff pastry ahead of time and already have cooked chicken, you will just have to cut out rounds of the pie crust and puff pastry, combine the filling ingredients, and assemble the pies. 


Dinner will be ready in no time!

Tortilla Pizzas

These tortilla pizzas are for the nights when you don't know what to do for dinner, and you don't seem to have the ingredients for any other recipe.






















These tortillas don't call for very many ingredients, and are easy to quickly throw together at the last minute. I like to make 2 at a time, or 3 if I'm baking them on a larger baking sheet.

Dry Roasted Edamame with Cranberries



Roasting vegetables is something I love to do, and this recipe was so fun to make. 



Probably I loved making this recipe so much because I liked to toss the small edamame while it was roasting, and I liked stirring and incorporating the cranberries into the roasted edamame.

Brown Butter Peach Cobbler Muffins

Notes on brown butter and peaches: 
1. If a recipe calls for the butter to be browned, it has to be good! 

2. There is not such a thing as having too many peaches. There are so many recipes that call for them and they are delicious on their own and incorporated with other ingredients.  

These brown butter peach muffins are very similar to Brown Butter Blueberry Muffins, except they have peaches.  I've made so many of those blueberry muffins because they are so good, but I actually think I like this peach version better!

Mexican Popcorn

With the exception of this popcorn, I have never made a flavored popcorn or special variety other than the original plain version.

This mexican popcorn has cumin, oregano, paprika and lime. I added a pinch of cayenne and it gave the popcorn a spicy touch.

Brown Butter Peanut Butter Crispy Rice Treats

I love sending mail and packages, but am always worried about what state the sent food is going to be in once it arrives at the final destination. 

These treats are solid, and are able to survive in the mail (and most importantly, they taste amazing! You'll never want to have a regular and plain one of these ever again).

Peach Blueberry Crumble Pie

 
Last week my aunt was in town and while she was here she bought me a huge basket of peaches!

 
Although I don't have them very often, peaches are one of my favorite summer fruits. They tasted so delicious in this pie, and the blueberries and crumble topping made it even better.
