Magnolia Bakery's Banana Pudding

We ended up with about 10 ripe bananas this weekend, so I made banana bread (which turned out pretty terrible) and this banana pudding.

A little planning is needed when making this recipe because you must let the pudding chill overnight, smack some whipped cream into it and then throw in some nilla wafers and bananas, and chill another 4 hours. These chilling periods are a little difficult for me, but it's worth it in the end!

Muscovado Sunflower Kernels

DSC_0812

This morning, I cooked a small brunch type meal with one of our friends, Druanne. We started out making bread, followed by a coffee cake, an egg dish with chilies, and these sunflower kernels.

These sunflower kernels are so quick and easy to make and I couldn't believe how delicious they were! The sugar gives them a crunchy and slightly sweet texture and taste, but it is not overpoweringly sweet.

Gluten-Free Milk Chocolate Toffee Pecan Cookies

DSC_0894

Gluten allergies seem like such a downer, but luckily there is Cup4Cup flour to bring baked goods back! The flour gave these cookies such a wonderful texture and the toffee bits and pecans throughout were a great addition of flavor for these wonderful cookies. I loved the bursts that the toffee provided because it was slightly chewy and toasted pecans are always delicious.

7 Amazing Hours

I'm still taking in everything that happened this weekend, but to start off with the basics, I spent seven incredible hours with Joy the Baker and Tracy Shutterbean at Teahouse Studio. Michael was there as well!

Although I still can't believe how lucky I was to spend this past Saturday with Joy, Tracy and everyone else at the workshop, I cannot express how much I enjoyed meeting two women that have given me so much inspiration and motivation. They were the nicest people I have ever met and I was so thankful for how nice they treated me as awkward and shy as I am. They are incredible role models and I am so thankful for their decision to start and keep blogging. I love reading their blogs, listening to their podcast, and just absorbing as much as I can from my two favorite bloggers. Finding their websites has led to so many incredible things and I will never forget how much these two girls mean to me and the knowledge they have shared. They have made me a better baker, cook, and now, photographer and food-styler.

Also, I am so grateful for how nice everyone was at the workshop. I was blown away by the kindness that every single person expressed on Saturday and how much fun I had.

Chocolate Pecan Cake

It seems like I've been baking a lot with pecans recently, but I haven't given the chocolate and pecan combo a try in a while. This cake turned out to be delicious, of course, and the pecans and chocolate were great together.

Useful Bread

This past weekend, my brother, John, and his girlfriend, Ally, came home to visit us. Ally brought us this amazing sweet potato struan from Sticky Boy Bread and it was absolutely delicious. Although we ate the majority of it straight up or with cheese, John also made croutons.

Chocolate Brownie Cookies with White Chocolate and Roasted Macadamia Nuts

Since I have looked all over for my camera chord and absolutely cannot find it, I am posting yet another cookie recipe. I have looked pretty much everywhere for this chord and it is no where to be found! I can't stand this!

These cookies are delicious, though, and I am excited to post them!

But I seriously need to find this chord. SOON.

Spinach Feta Mozzarella Mini Pies

Always making sure we have the ingredients for a recipe before I make it is something I always try to do. However, I forgot to pick up more feta for this recipe.

I just ended up using some mozzarella we had to make up for the it!

Vegan Pumpkin Pecan Bread

While at the grocery store buying the ingredients for this bread and a number of other recipes, the lady who helped bag our groceries noticed the flour, sugar, butter and eggs we were purchasing. I obviously did not use the butter or eggs in this recipe because "vegan" is in the title, but when she saw the eggs among the baking items she told us about when she biked three miles to her grocery store and back only to have forgotten the eggs. She said that you had to have eggs when you were baking and that she would never forgot them again.

While you do have to eggs for a lot of baked goods, this bread does not require any because it is vegan. You would never know, though, because it tastes soo similar to regular pumpkin bread, except it has pecans, which makes it even better.

Walnut Shortbread Cookies with Fleur de Sel

Walnuts are the one ingredient that I do not typically like in cookies. I don't like walnut chunks in chocolate chip cookies, or oatmeal cookies, or pretty much any other recipe involving chunky walnuts.

So far, that is.

Although I was not interested in this recipe at first due to the fact that it called for walnuts, I absolutely loved how these turned out! The walnuts are ground in a food processor so you don't have those pockets of gross in your cookies. Since they are ground, their nut characteristic causes their flavor to melt into the other ingredients of the cookie to enhance the butter and create a delicious shortbread.

Chocolate Chip Oatmeal Cookies

DSC_0391

Baking cookies on Friday afternoon has pretty much become a weekly event, but I think I'm going to make something other than cookies this Friday.

Although I'm not quite sure what I am going to make, I am sure of these cookies from a few Fridays ago.

These cookies in particular are full of oats and chocolate chips. I love oatmeal cookies and enjoyed the chocolate addition.

Broccoli Pecorino Tart

It is finally October and I am so excited! October seems like the time when it is acceptable to start baking with different spices and getting back in pumpkin (these look like the perfect thing to bake this weekend to have something to look forward to).

Although I don't have a super fall recipe today, I do have this amazing puff pastry tart.
