Chicken Caprese Burgers


I've already posted recipes for caprese grilled cheese as well as caprese bagel paninis, but this recipe with mozzarella, tomato, and pesto is another one worth sharing. Unlike the other recipes, this one has chicken. It adds an additional flavor to the sandwich and isn't dry or bland. 

Start out by making the pesto in a food processor.




Slice the tomato,


combine the ingredients for chicken and shape into patties before cooking.

Assemble the sandwiches with the bread, pesto, tomato slices, mozzarella slices and chicken.


An acceptable sandwich for dinner in no time!


Chicken Pesto Burgers
makes 4 burgers
from Everyday Food July/August 2012

1 cup loosely packed basil leaves
1 cup baby spinach (1 ounce)
1 clove garlic, peeled
1/4 cup walnuts
1 tablespoon water
1/4 cup olive oil
1/4 cup grated Parmesan
salt and pepper, to taste
1 lb. ground white-meat chicken
1 tomato, sliced
4 pieces focaccia, halved

Puree the basil, spinach, garlic, walnuts, water, and oil in a food processor. Stir in the Parmesan and season to taste with salt and pepper.
Heat a grill or grill pan to medium-high heat. Combine 1 tablespoon of the pesto, 3/4 teaspoon salt, 1/4 teaspoon pepper, and chicken in a medium bowl and form into 4 patties. Clean and lightly oil the grill before grilling the patties until cooked all the way through.
Assemble the burgers by spreading some of the pesto on one half of the focaccia, followed by a tomato slice, mozzarella slice, chicken, and the other focaccia half.
